Composition:
100% Zalema (native grape almost exclusively found in Condado de Huelva)
65 year old vines in clay and loam soils.
Elaboration:
Pre-fermentation maceration with its skins for four days in clay pots.
Fermented at 15º in the same clay pots in it’s own yeasts.
Micro-oxigenation in clay during 6 months
Alcoholic strength: 12,5º
Total sulphur dioxide: <3mg/L
TASTING NOTES:
Look: Some cloudiness, orange tint.
Smell: Citrus, mediterranean herbs and honey.
Taste: Intense and complex with a crunchy acidity and a very characteristic mineral note, saline.
